Oh, avocado. Is there anything you can’t do?

Taxes, maybe.

But forget the boring numbers – avocados are pretty much the best snack food ever. Slice one in half, drizzle some lime juice on it, throw on some sea salt, and go at it with a spoon.

Phil was an instant fan of avocados when he started eating solid foods. They were so easy to give him! No fancy avocado recipe here. Scoop out the tasty innards, mash em up with a fork, and boom. Baby food.

When we had a housewarming party a few years ago, we wanted to try a unique avocado recipe in lieu of the standard guacamole. Avocado ice cream was a total hit, and strangely enough I have been really wanting to make it again soon.

There was frost on my lawn this morning.

Unique Avocado Recipe:

I Scream for Green Ice Cream!

You’ll need:

  • 1 ยฝย cups whole milk
  • 1 ยฝย cups heavy cream
  • 5 large egg yolks
  • ยพย cup sugar
  • 2 super ripe avocados (1 lb)
  • 2 tsp lime juice
  • a large bowl full of ice

Instructions:

  1. Combine the egg yolks, sugar, and ยฝย cup cream in a bowl, and whisk until they’re smooth.
  2. In a heavy saucepan, combine milk and remaining 1 cup cream. Cook over medium heat until it starts to bubble around the edges.
  3. Gradually whisk 1/2 cup of hot milk mixture into egg mixture. Keep that whisk moving so you don’t cook your eggs! Do this until smooth.
  4. Pour egg mixture into saucepan with remaining milk mixture. Cook over medium heat, using a wooden spoon to stir constantly. I’m not kidding, do not stop stirring. The worst thing ever is lumps of cooked eggs in your avocado ice cream.Keep cooking this custard at a low simmer and keep stirring until it’s thick. (About 4-6 minutes.) It should coat your spoon. When you run your finger across the top, it should leave a trail. DON’T LET IT BOIL!
  5. Strain the custard through a fine mesh into a bowl. If all you’ve got is a colander, that’ll work.
  6. Put that bowl into a bigger bowl full of ice. Stir custard until cool. Cover with plastic wrap, pushing down so the wrap is along the top of the custard. You’re trying to prevent a skin from forming across the top. (Gross.) Let that sit in the fridge for at least 3 hours.
  7. Pit avocados and scrape the good stuff out. Put it in a blender with the custard. Pulse 4-5 times to mix it up. Add lime juice, pulse a couple more times to blend. Put the mixture in a bowl, covering with plastic wrap. Same drill, press down so the wrap’s right on the top of the ice cream. Put it in the fridge for at least 30 minutes, up to 2 hours.
  8. Pour your avocado mixture into the ice cream maker, and freeze according to manufacturer’s directions. Put it in a freezer safe container (we use Tupperware), cover, and freeze until it reaches desired firmness. That can take a few hours if you like it a little easier to scoop, or a few days if you prefer a firmer ice cream.(Adapted from Williams-Sonoma Collection: Ice Cream)
