How to Make Deviled Eggs – My Ever Fail Recipe
Yesterday I realized that I had chickens and eggs, but I had no idea how to make deviled eggs.
Joshnigel and I had my sister and her family over for Memorial Day – and while I was making pasta salad and getting burger fixings ready in the afternoon, I decided to try my hand at this devilishly simple appetizer!
Here’s how you too can make a tray of fancy deviled egg goodness for your next party:
Step 1: Boil, cut and separate your eggs.
First I hard-boiled my eggs. I peeled the shecks off, then cut them in half length-wise, scooping out the yolks into a separate bowl.
I was very careful to be gentle with my eggs so they didn’t break into a million pieces. I also arranged them stylishly on a bright yellow plate for serving.
Step 2: Prepare the deviled egg filling and apply it to your gorgeous egg halves.
I mixed my 6 egg yolks with a 1/4 cup of mayonnaise, a tablespoon of mustard, a teaspoon of vinegar, and some salt and pepper to create the deviled egg filling.
Then I ever so carefully filled my hard boiled egg whites using a teaspoon.
But something was missing…
Step 3: Garnish.
The paprika really helps the presentation, don’t you think?

Nice work, Steph! Eggs have always been difficult for me to peel.
I love deviled eggs – but also, simultaneously, think they’re totally gross. I told Jason how I felt and he agreed: delicious and gross. How does that work?

Your eggs might be too fresh… and it works better if you store them flat.
(Why do I know this? When I was in grade school we had an animal husbandry program… I know way too much about the inside of a raw egg).

Hey, somebody was telling me the other day about how older eggs are better for boiling and I totally thought of this post! The Nice Lady beat me to it, I see… Better luck next time! For the record, I LOVE devilled eggs and this is reminding me that it’s been way too long since I’ve made them!
